Dry ingredients * 240 g all-purpose flour * 1 ½ tsp baking powder (≈ 6 g) * 1 tsp ground cinnamon (≈ 2.5 g) * 1 tsp ground ginger (≈ 2 g) * ¼ tsp freshly ground cloves* (≈ 0.5 g) * ¼ tsp freshly ground cardamom* (≈ 0.5 g) * ½ tsp fine salt (≈ 3 g) *If grinding yourself: * 2 whole cloves * 4–5 cardamom seeds (from 2–3 pods)
Grind very finely — cloves are potent. Wet ingredients * 113 g unsalted butter, melted and cooled (½ cup) * 150 g dark brown sugar * 65 g granulated sugar * 80 g molasses (Grandma’s is perfect) * 1 large egg (≈ 50 g without shell) * 1 tsp vanilla extract (≈ 5 g) For rolling (optional but classic) * ~40 g granulated sugar Method 1. In a bowl, whisk together flour, baking powder, spices, and salt. 2. Mix wet ingredients
In a larger bowl, whisk melted butter, brown sugar, and white sugar until glossy.
Whisk in molasses, egg, and vanilla until smooth. 3. Combine
Stir dry ingredients into wet just until no dry spots remain.
Dough will be soft and slightly sticky. 4. Chill (important!)
Cover and refrigerate 45–60 minutes — this prevents spreading and deepens flavor. 5. Bake * Oven: 175°C (350°F) * Scoop ~40 g dough per cookie * Roll in sugar if using * Place 5–6 cm apart 6. Bake 9–11 minutes until: * edges are set * centers look slightly underbaked and crackly 7. Cool
Let rest on tray 5 minutes, then transfer. They’ll firm up but stay chewy.
